Raw Vegan Spinach Dip
Who doesn't love a cheesy spinach dip? Here's a delicious snack that you can serve at your next party or just have as a nutritious treat! This recipe only takes about 5 minutes to make. You'll need:
A high speed blender
2-3 cups of chopped spinach
1 cup of pre-soaked cashews (soak the cashews in filtered water for about 15 minutes. Drain off the water once they are done soaking and discard the water).
1 tablespoon of nutritional yeast
1/4 cup of chopped red onion (optional)
A few dashes of onion powder (optional)
The juice of 1 lemon
1/4-1/2 tsp of pink salt or sea salt to taste
Make it spicy with some chopped jalepeno (optional)
Place the cashews, lemon juice, salt, nutritional yeast and onion powder in the blender. Add a couple splashes of water to help facilitate the blending process. Blend until you have a smooth, sauce-like consistency.
In a bowl, combine the chopped spinach and red onion. Pour the cheese sauce on top and mix it all together until it looks like spinach dip!
Serve with slices of cumber or other chopped vegetables of your choice. You can also serve it with some raw chips or flax crackers. Enjoy!
