Raw Vegan Protein Cookies


These protein cookies only require 4 ingredients and there's no baking required! They make a great pre or post-workout snack and you can take these with you anywhere. I love to bring these on hikes or on road trips. These are a low-fat, guilt-free treat.

You will need a high speed food processor for this recipe. I like this one: http://amzn.to/2GEfX9H

Ingredients:

2 cups of pitted medjool dates

1/3 cup of dried mulberries

2 scoops of raw vegan protein powder. I love the Garden of Life brand:http://amzn.to/2EvOJBq

1-2 tablespoons of raw cacao nibs. http://amzn.to/2FBHPtF

Directions:

Place all ingredients into the food processor and blend on high until everything clumps together into a cookie dough-like texture. You may need to add a tiny bit of water during the blending process if you have trouble getting it to stick together. You can also pre-soak your dates for 30 minutes to an hour to plump them up if they are on drier side of juicy.

After everything is blended together, take your cookie dough and place it on a large cutting board. Roll it out using a rolling pin or pint glass. Once it's flattened out, you can take a cookie cutter of your choice and start cutting away! Place the cookies in the freezer for about 30 minutes before eating as this will help them solidify. Personally, I like to store my cookies in the freezer because I enjoy frozen cookies, but you can store these in the fridge or the pantry as well depending on your personal preference!
